In food industry, it is fundamental to guarantee high quality properties for each product regarding the physical and microbiological characteristics. In particular, meat preservation requires specific conditions to keep the product in the accepted quality criteria especially the microbiological side. In this context, this article evaluated the Neem cake natural extract effect against microorganisms that affect meat quality.
